  • 2 large tomatoes (about 1 lb.)
  • 1 large cucumber, peeled, halved lengthwise and seeded
  • 1 large roasted red bell pepper (jar is fine)
  • 3 c. tomato juice
  • 1/2 c. fresh cilantro, chopped
  • 1/3 c. red wine vinegar
  • 1/4 c. olive oil
  • Tabasco sauce to taste
  • croutons

    Cut 1 tomato, 1/2 cucumber into 1-inch pieces and transfer to processor.
