  • 2 large onions, sliced
  • 3 garlic cloves, chopped
  • 2 small eggplants, cubed
  • 4 small zucchini, sliced
  • 3 green peppers, cut in strips
  • 2 1/2 c. plum tomatoes
  • 1 tsp. dry basil
  • 1/2 c. chopped parsley
  • 1 1/2 tsp. salt
  • pepper to taste
