Classic Rice Pudding

  • 2 eggs
  • 12 cup caster sugar
  • 1 cup water
  • 1 cup milk
  • 1 teaspoon vanilla
  • 1 green apple, peeled, cored, diced
  • 12 cup prune, chopped
  • 1 cup short-grain rice, cooked
  • nutmeg

Directions

    Whisk eggs and sugar together in a bowl.

    Blend in water, milk and vanilla.

    Add apples, prunes and rice to batter.

    Stir well.

    Pour into a greased 20 cm ovenproof dish.

    Sprinkle with nutmeg.

    Place pudding dish in baking dish.

    Add enough water to come halfway up sides of dish.

    Bake at 160 C for 45 minutes or till set.

    Remove from water bath.

    Serve warm.
