  • 1 c. water
  • 1 c. raisins
  • 1 c. unsweetened applesauce
  • 2 eggs
  • artificial sweetener (to equal 1 c. sugar)
  • 3/4 c. oil
  • 1 tsp. baking soda
  • 2 c. flour
  • 1 1/2 tsp. cinnamon
  • 1/2 tsp. vanilla
  • 1/2 tsp. salt

Directions

    Cook raisins in water until they are soft.

    Drain. Add applesauce, eggs, sweetener and oil.

    Mix well. Blend in baking soda, flour and remaining ingredients. Bake at 350° about 19 minutes.

    One cupcake equals 1 fruit and 1 fat.
