- 2 c. shredded reduced-fat sharp Cheddar cheese
- 1 can 99% fat-free cream of chicken soup
- 1 c. fat-free sour cream
- 1/2 c. evaporated skim milk
- 6 medium potatoes (2 lb.), peeled
- 2 c. corn flakes
- 1/2 c. finely chopped onions
Directions

1Preheat the oven to 350°.

2In large bowl, stir together the cheese, sour, sour cream, milk and onions.

3Set the soup mixture aside.

4Crush corn flakes into coarse crumbs.

5Coarsely shred the potatoes.

6Immediately stir the potatoes into the soup mixture to prevent browning.

7Spray oblong pan with no-stick spray. Transfer the potato mixture to the baking dish.

8Top with corn flakes.

9Bake 1 hour or until the potatoes are tender.
