Ingredients

  • 1 medium onion (Vidalia is best)
  • 1 zucchini squash
  • 1 1/2 c. cooked twirled pasta
  • 1 qt. V-8 juice
  • about 1 Tbsp. Parmesan cheese

Directions

    Steam chopped onion and sliced zucchini in 1/2 water until tender.

    Season with salt and pepper.

    Add cooked pasta and V-8 juice; simmer for 5 minutes.

    Cover top with Parmesan cheese. Stir into soup.
