  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 2 eggs
  • 3/4 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1/2 cup olive oil
  • 1 cup sour cream
  • 1 1/4 cups powdered sugar
  • 2 tablespoons lemon juice
  • 2 tablespoons milk
  • red food coloring
  • m&m 's, to decorate
  • decorating icing Chocolate, to decorate

    Preheat the oven to 325°F. Line a 12-cup muffin pan with paper liners. Mix flour, baking powder and baking soda in a large bowl. Beat eggs in a medium bowl. Stir in granulated sugar, vanilla extract, oil and sour cream. Add to the flour mixture and stir until well mixed. Divide among the muffin cups.

    Bake for 20-25 mins, until a toothpick inserted into the center comes out clean. Cool in pan 5 minutes. Remove from pan; cool completely on wire rack.

    For the frosting, mix powdered sugar and lemon juice until well blended. Stir in milk to desired spreading consistency. Remove 2 tbsp of the frosting and tint red with food coloring. Cover with plastic wrap. Spread the white frosting on the cupcakes. Decorate with M&M's for the nose. Let stand to allow frosting to dry.

    Use the decorating icing to draw eyes and smiley mouths. Spoon the red frosting into a piping bag fitted with a small plain tip. Pipe cheeks and hair on the clown faces. Let stand to allow frosting to dry.
