Ingredients

  • 1 lb. sliced bacon
  • 1 large ripe avocado
  • 1 Tbsp. lemon juice
  • 1 medium size head iceberg lettuce, thinly shredded
  • 6 Tbsp. white wine vinegar
  • 1/2 tsp. salt
  • 1/8 tsp. each: garlic powder and freshly ground pepper
  • 3 Tbsp. chopped chives
  • 1/2 c. salad oil
  • 2/3 c. (about 3 oz.) finely crumbled Blue cheese
  • 1 large tomato, seeded and chopped
  • 1 1/2 c. diced, cooked chicken or turkey
  • 2 hard-cooked eggs, chopped
  • watercress sprigs (optional)

Directions

    In wide frying pan over medium heat, cook bacon until crisp. Lift out, drain and crumble.

    Pit, peel and dice avocado.

    Moisten avocado with lemon juice and set aside.
