  • 4 boneless skinless chicken breast halves
  • 1 tablespoon cornstarch
  • 2 tablespoons lemon juice
  • 2 12 cups dark sweet cherries, pitted
  • 13 cup flour
  • 12 ground cinnamon
  • 12 ground allspice
  • 12 cup water
  • 14 cup coconut, shredded & toasted

Directions

    Stir together cornstarch and lemon juice; stir in cherries.

    Combine flour and spices in a bag; add chicken and shake to coat.

    Brown chicken over medium-high heat in skillet sprayed with nonstick cooking spray.

    Add water, reduce heat; cover and simmer about 20 minutes or until chicken is tender.

    Remove chicken from pan and cover with foil.

    Remove all but 1 tbsp drippings from pan; add cherry mixture and bring to a boil.

    Cook until sauce thickens.

    Place chicken onto serving plates, pour cheery sauce over chicken and top with coconut.
