Cocoa Chiffon Cake

Ingredients

  • 1/2 c. cocoa
  • 3/4 c. boiling water
  • 8 eggs, separated
  • 1/2 tsp. cream of tartar
  • 1 3/4 c. cake flour, sifted
  • 1 1/2 tsp. soda
  • 1 3/4 c. sugar
  • 1 tsp. salt
  • 1/2 c. salad oil
  • 2 tsp. vanilla

Directions

    Mix cocoa and boiling water.

    Stir until smooth, set aside. Beat egg whites with cream of tartar until very stiff.

    Sift dry ingredients in a large bowl.

    Make a well in center.

    Add oil, egg yolks and cocoa.

    Mix and add vanilla.

    Beat well.

    Fold in egg whites.

    Use angel food pan.

    Bake in 325° oven for 55 minutes. Raise heat to 350° and continue 10 minutes.
