Cocoa Peanut Brittle

Ingredients

  • 1 c. sugar
  • 1/2 c. light corn syrup
  • 1/4 c. heavy or whipping cream
  • 1 (6 1/2 oz.) can salted peanuts (about 1 1/4 c.)
  • 3 Tbsp. cocoa
  • 1 Tbsp. butter or margarine
  • 1 tsp. baking soda

    About 2 hours before serving or up to 1 week ahead, lightly grease large cookie sheet and set aside.

    In heavy 2-quart saucepan, over medium heat, beat sugar, corn syrup and heavy cream to boiling, stirring constantly, until sugar is dissolved.

    Stir in peanuts.
