- 4 c. sweetened shredded coconut
- 2 tsp. ground cumin
- 3/4 tsp. ground coriander
- 1/2 tsp. cayenne pepper
- salt and pepper
- 2 beaten eggs
- 2 lb. large shrimp, shelled (leave on tails)
Directions

1Bake coconut in a 325° oven until brown (about 10 minutes; stir several times and watch carefully).

2Coarsely grind coconut. Mix spices in a large bowl with eggs; coat shrimp.

3Dredge in coconut.

5greased baking sheets and refrigerate 1 hour to 1 day.

6Bake in a 400° oven for about 12 minutes.
