  • 3 c. flour
  • 1 c. sugar
  • 4 tsp. baking powder
  • 1 tsp. salt
  • 3 1/2 oz. toasted coconut
  • 2 tsp. orange or lemon peel
  • 1 egg, slightly beaten
  • 1 1/2 c. milk
  • 2 tsp. cooking oil
  • 1 tsp. vanilla

Directions

    Sift together first 4 ingredients. Stir in coconut and orange or lemon peel.

    Combine remaining ingredients (add to dry mixture all at once).

    Stir until mixed well.

    Bake at 350° for 60 to 70 minutes in lightly greased loaf pan.
