Coconut Bread

Ingredients

  • 2 c. sugar
  • 1 c. margarine
  • 4 eggs
  • 1 tsp. almond essence
  • 2 c. coconut, grated (fresh is best)
  • 6 c. flour
  • 4 tsp. baking powder
  • 1 1/2 c. coconut water or regular water
  • raisins (optional)
  • cinnamon and sugar (for top of bread)

Directions

    Beat eggs and sugar together.

    Add eggs, almond essence, coconut, flour, baking powder, water and raisins.

    Put this mixture into a greased and floured loaf pans (divide between 2 or 3 loaf pans, too much for one).

    Make a little indentation in loaf, put reserved coconut and cinnamon and sugar into this indentation on top of the loaf.

    Bake at 325° until toothpick inserted into loaf comes out clean.
