Coconut Bread

- 2 c. sugar
- 1 c. margarine
- 4 eggs
- 1 tsp. almond essence
- 2 c. coconut, grated (fresh is best)
- 6 c. flour
- 4 tsp. baking powder
- 1 1/2 c. coconut water or regular water
- raisins (optional)
- cinnamon and sugar (for top of bread)
Directions

1Beat eggs and sugar together.

2Add eggs, almond essence, coconut, flour, baking powder, water and raisins.

3Put this mixture into a greased and floured loaf pans (divide between 2 or 3 loaf pans, too much for one).

4Make a little indentation in loaf, put reserved coconut and cinnamon and sugar into this indentation on top of the loaf.

5Bake at 325° until toothpick inserted into loaf comes out clean.
