  • 4 c. flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 2 c. grated fresh coconut
  • 3/4 c. sugar
  • 1 tsp. vanilla
  • 1 egg, beaten
  • 1 c. 1% milk
  • sugar

Directions

    Sift together flour, baking powder and salt. Add coconut, sugar, vanilla and egg. Mix well. Add milk, a little at a time, until dough is firm but not sticky. Knead for a few minutes. Shape dough into 2 loaves and place into greased 5 x 9-inch (13 x 23 cm) loaf pans. Dust dough with sugar and bake at 350° for 1 hour or until golden brown. Makes 2 loaves.
