- 2 sticks butter, softened
- 2 c. sugar
- 4 eggs
- 4 tsp. coconut extract
- 2 c. sour cream
- 2 c. shredded coconut
- 4 c. all-purpose flour
- 2 tsp. baking soda
- 2 tsp. baking powder
Directions

1Cream together butter and sugar.

2Beat eggs and extract, then sour cream.

3Add coconut.

4Stir together the flour, baking soda and baking powder.

5Beat into batter.

6Divide between 2 lightly greased loaf pans and bake at 350° for about 45 minutes or until bread tests clean when a toothpick inserted in the center comes out without any clinging batter or wet crumbs.
