  • 2 sticks butter, softened
  • 2 c. sugar
  • 4 eggs
  • 4 tsp. coconut extract
  • 2 c. sour cream
  • 2 c. shredded coconut
  • 4 c. all-purpose flour
  • 2 tsp. baking soda
  • 2 tsp. baking powder

    Cream together butter and sugar.

    Beat eggs and extract, then sour cream.

    Add coconut.

    Stir together the flour, baking soda and baking powder.

    Beat into batter.

    Divide between 2 lightly greased loaf pans and bake at 350° for about 45 minutes or until bread tests clean when a toothpick inserted in the center comes out without any clinging batter or wet crumbs.
