  • 3 c. all-purpose flour
  • 1 c. butter or 1/2 c. butter and 1/2 c. margarine
  • 1 c. fresh grated coconut
  • 1 c. coconut milk
  • 4 well beaten egg yolks
  • 3 tsp. baking powder
  • 1 tsp. vanilla
  • 1 lb. confectioners sugar
  • 4 egg whites, stiffly beaten
  • 1/4 tsp. salt

    Sift flour with baking powder and salt 3 times.

    Cream butter and sugar thoroughly until light and fluffy.

    Add egg yolks and beat well.

    Add flour and coconut milk alternately, a small amount at a time, beating after each addition until smooth.

    Add vanilla and coconut.

    Fold in egg whites that have been beaten.

    Bake in 3 large cake pans at 350° for about 30 to 35 minutes.

    Spread with Seven Minute Icing; sprinkle with fresh grated coconut.
