- 1 c. shortening
- 5 eggs
- 1 tsp. coconut extract
- 2 c. self-rising flour
- 13 oz. coconut
- 1 c. buttermilk
Directions

1Cream sugar and shortening and add eggs, one at a time.

2Beat 2 minutes after each.

3Add extract, buttermilk and flour.

4Add coconut.

5Stir well, then beat 2 1/2 minutes with mixer.

6Bake 1 hour 350°.
