  • 4 pieces chicken breast (boneless, skinless)
  • 1 c. flour
  • 2 eggs
  • 6 c. Japanese bread crumbs
  • 1 c. shredded coconut
  • 1 tsp. salt

Directions

    Pound chicken lightly; set aside. Beat eggs. Combine together bread crumbs, coconut and salt. Dredge chicken in flour; dip into beaten eggs and press firmly into crumb mixture. Repeat process for remaining chicken breasts. Deep-fry chicken in oil at 350° until golden brown. Finish cooking in 350° oven until it reaches internal temperature of 165°.
