  • 1 c. butter
  • 1 c. firmly packed brown sugar
  • 1 egg
  • 2 tsp. vanilla
  • 1/4 tsp. salt
  • 1 3/4 c. all-purpose flour
  • 1 3/4 c. coconut

Directions

    Cream butter and sugar until fluffy.

    Mix in egg, vanilla and salt.

    Add flour, a little at a time.

    Stir in coconut.

    Drop by teaspoonfuls onto ungreased baking sheet.

    Flatten with floured bottom of a glass.
  7. 7
    Sprinkle with additional coconut, if desired. Bake at 375° for 10 minutes or until golden brown around edges. Makes about 4 1/2 dozen cookies.
