- 1 md. potato, cooked and mashed
- 1 pkg. (1 lb.) coconut
- 1/4 tsp. salt
- 1 tsp. vanilla
- 3 lb. confectioners' sugar
- 1 lb. chocolate, melted
Directions

1Thoroughly mix potato, coconut, salt and vanilla.

2Gradually add sugar and mix until thoroughly blended.

3Shape into eggs on cookie sheet and let ripen overnight.

4Next day, dip into chocolate.

5Set eggs onto waxed paper to harden.
