- 3 egg yolks, well beaten (save whites for meringue)
- 2 c. milk
- 1/3 c. flour
- 2 tsp. oleo
- 1 1/3 c. coconut (divided use)
- 1 (9-inch) pie shell, baked
- 3/4 c. sugar
- 1/4 tsp. salt
- 1 tsp. vanilla
- Meringue
Directions

1Preheat oven to 350°.

2In a medium saucepan, combine egg yolks and milk.

3Mix well. Add sugar, flour and salt.

4Cook over medium heat until thick, stirring constantly. Remove from heat. Add oleo, vanilla and 1 cup coconut.

5Pour into baked crust. Spread meringue over filling, sealing edges to crust.

6Sprinkle with remaining 1/3 cup coconut.

7Bake for 12 to 15 minutes or until browned.
