- 2/3 c. sugar
- 3 Tbsp. cornstarch
- 1/2 tsp. salt
- 1 Tbsp. butter
- 3 c. milk
- 3 egg yolks, beaten
- 1 1/2 tsp. vanilla
- 3/4 c. coconut
Directions

1Mix sugar, cornstarch and salt. Gradually stir in milk.

2Cook over medium heat, stirring constantly, until mixture thickens and boils.

3Remove from heat and stir at least half of hot mixture into egg yolks.

4Then blend into hot mixture in saucepan.

5Boil 1 minute more, stirring constantly.

6Remove from heat.

7Blend in butter and vanilla.

8Pour into a baked pie shell.

9Finish with pie meringue from egg whites.
