- 2 c. milk
- 1/2 c. granulated sugar
- 2 Tbsp. all-purpose flour
- 2 Tbsp. cornstarch
- 2 large eggs, separated
- 1 Tbsp. butter
- 1/2 tsp. salt
- 1 1/4 c. shredded coconut
- 1 tsp. vanilla
Directions

1Scald 1 1/2 cups milk in top of double boiler.

2Combine sugar, flour, cornstarch and salt.

3Stir this flour mixture into hot milk.

4Cook until thickened.

5Remove from heat; add butter, vanilla and 3/4 cup coconut.

6Allow mixture to cool, then pour into baked 9-inch pie shell.

7Cover with meringue and remaining coconut.

8Bake at 350° for 10 to 15 minutes or until meringue browns lightly.
