- 1 c. sifted flour
- 1/2 tsp. baking powder
- 1/2 tsp. salt (optional)
- 1/2 c. oleo
- 1 c. brown sugar
- 1 egg
- 1 tsp. vanilla
- 1 c. quick cooking oats
- 1/2 c. chopped pecans (optional)
- 1 c. toasted coconut
Directions

1Spread coconut in shallow pan and toast in 325° oven for 2 to 3 minutes.

2Cream butter; add sugar and mix.

3Add egg and beat, then vanilla.

4Sift flour, baking powder and salt together and add to butter mixture.

5Stir in oats and toasted coconut and pecans. Drop by spoonfuls on ungreased cookie sheet.

6Bake at 325° until brown on edges.
