  • 1 c. sifted flour
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt (optional)
  • 1/2 c. oleo
  • 1 c. brown sugar
  • 1 egg
  • 1 tsp. vanilla
  • 1 c. quick cooking oats
  • 1/2 c. chopped pecans (optional)
  • 1 c. toasted coconut

Directions

    Spread coconut in shallow pan and toast in 325° oven for 2 to 3 minutes.

    Cream butter; add sugar and mix.

    Add egg and beat, then vanilla.

    Sift flour, baking powder and salt together and add to butter mixture.

    Stir in oats and toasted coconut and pecans. Drop by spoonfuls on ungreased cookie sheet.

    Bake at 325° until brown on edges.
