  • 3/4 cups Flour
  • 1/4 teaspoons Baking Soda
  • 1/2 teaspoons Baking Powder
  • 1/4 teaspoons Salt
  • 1/2 sticks Butter
  • 1/2 cups Sugar
  • 1 Egg
  • 1 teaspoon Vanilla Extract
  • 3/8 cups Coconut Cream
  • 1 cup Shredded Sweetened Coconut Flakes

    Preheat oven to 350°F. In a bowl, sift together flour, baking soda, baking powder and salt; set aside. In another bowl, cream butter and sugar until fluffy. Add egg and vanilla, mix until combined. Add half the flour mixture, mix, then add coconut milk, and mix in the remaining flour mixture. Do not over-mix. Fold in shredded coconut. Fill cupcake liners 2/3 full and bake for 18-20 minutes. Cool completely before frosting.
