Coconut Custard Pie

  • 3 eggs, separated
  • 1/2 c. sugar
  • 2 c. scalded milk
  • dash of salt
  • 1/2 c. shredded coconut
  • 8-inch pie shell, lightly baked

Directions

    Beat egg yolks with the sugar.

    Add milk gradually, salt, then coconut and stiffly beaten whites.

    If desired, mix 1/2 tablespoon cornstarch with the sugar and use only 2 eggs.

    Fill shell and bake 30 minutes at 300°.
