- 3 1/2 c. cornflakes
- 1 c. chopped, pitted dates
- 3/4 c. sugar
- 2 eggs, beaten
- 1 c. chopped walnuts
- 1 tsp. vanilla
- 1 1/3 c. flaked coconut
- 12 candied cherries, cut into halves
Directions

1Crush cornflakes slightly with hands; set aside.

2Combine dates, sugar and eggs in a 10-inch skillet.

3Cook over medium heat, stirring constantly, until mixture pulls away from the sides of the pan, about 5 minutes.

4Remove from heat.

5Stir walnuts and vanilla into date mixture.

6Gently stir in cornflakes.

7Cool slightly, about 5 minutes.

8Shape mixture into 1 1/2-inch balls. Roll each in flaked coconut.

9Place on waxed paper lined baking sheets.

10Press a candied cherry half in each ball, flattening slightly.

11Makes 24.
