- 1 (9-inch) baked pie shell
- 1/4 c. cornstarch
- 2/3 c. sugar
- 1/2 tsp. salt
- 2 1/2 c. milk
- 3 eggs, separated
- 1 tsp. vanilla
- 1 c. flaked coconut
- 6 Tbsp. sugar
Directions

1Mix the cornstarch, sugar, salt and egg yolks with 1/2 cup of the milk.

2Heat remaining 2 cups to boiling.

3Add the sugar mixture and cook until thick.

4Add coconut and vanilla.

5Pour in pie shell.

6Whip the three egg whites, adding 6 tablespoons sugar. Bake at 425° for 5 minutes or until brown.
