  • 1 (9-inch) baked pie shell
  • 1/4 c. cornstarch
  • 2/3 c. sugar
  • 1/2 tsp. salt
  • 2 1/2 c. milk
  • 3 eggs, separated
  • 1 tsp. vanilla
  • 1 c. flaked coconut
  • 6 Tbsp. sugar

    Mix the cornstarch, sugar, salt and egg yolks with 1/2 cup of the milk.

    Heat remaining 2 cups to boiling.

    Add the sugar mixture and cook until thick.

    Add coconut and vanilla.

    Pour in pie shell.

    Whip the three egg whites, adding 6 tablespoons sugar. Bake at 425° for 5 minutes or until brown.
