Ingredients
- 1 c. sugar
- 1/2 c. cornstarch
- 1/4 tsp. salt
- 3 c. hot milk
- 3 beaten egg yolks
- 1 tsp. vanilla
- 1/2 tsp. almond flavoring
- 2 c. coconut (fresh or frozen), divided
- 9-inch baked pie shell
Directions

1Combine in saucepan the sugar, cornstarch and salt.

2Stir in the hot milk gradually until smooth.

3Bring to a boil; boil for 2 minutes.

4Remove from heat.

5Stir a small amount of hot mixture into the beaten egg yolks until the eggs are mixed into the hot mixture.

6Cook over low heat, stirring constantly, for 5 minutes, until it boils and is thick enough to mound.

7Pour into bowl. Stir in the vanilla and almond flavoring.

8Add 1 cup coconut.

9Put wax paper over filling.

10Refrigerate 1 hour.
