  • 3 eggs
  • 1 c. sugar (use 1- 1/4 c. if coconut is not sweet)
  • 2/3 stick margarine, melted
  • 1 Tbsp. vinegar
  • 1 tsp. vanilla
  • 1 can grated coconut or 2 c. frozen coconut
  • 1 small can crushed pineapple, drained (3/4 c.)
  • dash of salt

Directions

    Mix well and pour into unbaked pie shell.

    Bake 1 hour at 300 degrees.
