- 4 oz. cream cheese, softened
- 1 pkg. nondairy topping mix
- 2 tsp. vanilla
- 2 (3 oz.) pkg. instant vanilla pudding mix
- whipped cream
- 1/4 c. sugar
- 1/2 c. milk
- 1 c. flaked coconut
- 1 c. toasted coconut
- 2 baked 8-inch pie crusts
Directions

1Combine cream cheese, sugar, topping mix, milk and vanilla. Beat until light and fluffy.

2Pour into pie crusts.

3Spread 1/2 cup coconut on each pie and chill.

4Prepare instant pudding mix according to directions.

5Add 1 teaspoon vanilla; pour over cream cheese layer.

6Garnish with whipped cream and toasted coconut.
