- 1 c. sugar
- 2 c. milk
- 1 c. coconut
- 3 Tbsp. cornstarch
- 1 Tbsp. vanilla
- 2 Tbsp. butter
- 1/2 c. coconut
Directions

1Divide the eggs. Mix egg yolks and cornstarch; beat thoroughly. Add milk. Put in double boiler; cool until thick. Remove from stove. Mix tablespoon butter and 1/2 cup coconut. Pour into baked pie shell. Beat egg whites until stiff, adding 2 tablespoons sugar to each egg white. Spread on pie crust; sprinkle coconut. Place in oven; bake until brown.
