- 1/3 c. sugar
- 1/2 c. flour
- 1/4 tsp. salt
- 3 c. milk
- 1 c. shredded coconut
- 2 slightly beaten egg yolks
- 2 tsp. vanilla
- 1 Tbsp. butter
- 1 baked (9-inch) pie shell
Directions

1Combine sugar, flour and salt in double boiler; add milk gradually, stirring until smooth.

2Add 3/4 cup of coconut.

3Cook over rapidly boiling water 15 minutes, stirring.

4Mix small amount of mixture with egg yolks, return to double boiler and cook two minutes longer.

5Remove from heat.

6Add vanilla and butter.

7Cool. Turn into a cooled pie shell.

8Sprinkle with remaining 1/4 cup coconut.
