- 2 c. all-purpose flour
- 2 tsp. baking soda
- 1/2 tsp. salt (optional)
- 3/4 c. vegetable oil
- 3/4 c. buttermilk
- 3 eggs
- 1 tsp. vanilla
- 2 c. sugar
- 1 (8 oz.) can crushed pineapple, drained
- 3 c. coconut, divided
- Cream Cheese Frosting
Directions

1Preheat oven to 350°.

2Grease and flour a 9 x 13-inch pan. Combine flour, baking soda and salt.

3In separate bowl, whisk together oil, buttermilk, eggs and vanilla.

4Stir in sugar, pineapple and 1 1/2 cups coconut; mix well. Stir in flour mixture. Pour into pan.

5Bake on center oven rack for 30 to 35 minutes or until toothpick inserted near center comes out clean.

6Cool in pan on wire rack.
