Coconut-Pineapple Pie

- unbaked 9 or 10-inch pie shell
- 1/2 stick butter or margarine, softened
- 1 3/4 c. sugar
- 1 Tbsp. corn meal
- 4 eggs
- 8 1/4 oz. can crushed pineapple
- 3 1/2 oz. can flaked coconut
Directions

1Prepare pie.

2Mix softened butter, sugar and corn meal.

3Add eggs, one at a time, mixing well after each addition.

4Add pineapple and coconut and mix well.

5Spoon mixture into unbaked pie crust.

6Bake at 450°

7for 10 minutes.

8Reduce heat to 325° and bake 30 to 40 minutes until center is firm.
