Coconut Pound Cake

  • 3 c. sugar
  • 3 sticks butter or margarine (room temperature)
  • 3 c. all-purpose flour
  • 1/4 tsp. soda
  • 1/2 tsp. salt
  • 8 oz. sour cream
  • 1 pkg. frozen coconut
  • 6 eggs, room temperature
  • 1 tsp. vanilla or 1/2 tsp. lemon flavor or 1/2 tsp. almond flavor

Directions

    Cream butter about 3 minutes or until light and fluffy, then add sugar and continue to beat until smooth.

    Add eggs one at a time beating after each.

    Sift flour and soda and salt together. Add to creamed mixture with sour cream.

    Bake in tube pan for 1 hour or until tester comes out clean.

    Bake at 325°.

    I grease and flour my pan.
