Coconut Pound Cake

  • 3 c. sugar
  • 3 sticks oleo
  • 1/4 tsp. salt
  • 1 (8 oz.) carton sour cream
  • 1 tsp. almond extract
  • 6 eggs
  • 3 c. all-purpose flour
  • 1/4 tsp. baking soda
  • 1 tsp. vanilla extract
  • 1 (6 oz.) pkg. frozen coconut

Directions

    Bring oleo to room temperature.

    Spray tube pan.

    Heat oven to 325°.

    Cream oleo and sugar until fluffy.

    Add eggs, one at a time, beating well after each one.

    Sift flour, salt and soda together.

    Add to creamed mixture, then stir in sour cream.

    Beat well.

    Add flavorings and turn into pan. Bake 1 1/2 hours or longer if needed.

    Test doneness with toothpick.
