  • 1 c. shortening
  • 2 c. sugar
  • 2 c. flour
  • 1 c. buttermilk
  • 1 can coconut
  • 5 eggs
  • 1 1/2 tsp. baking powder
  • 1 tsp. salt
  • 1 1/2 tsp. coconut flavoring

Directions

    Cream shortening and sugar together.

    Add eggs, one at a time. Beat well after each.

    Sift dry ingredients.

    Add alternately with the buttermilk, coconut flavoring and coconut.

    Bake in a greased and floured stem pan for 50 minutes to 1 hour at 350°.
