  • 2 c. sugar
  • 5 eggs, beaten 10 minutes (important)
  • 2 c. flour
  • 1 1/2 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. coconut extract
  • 1 c. buttermilk
  • 1 (7 oz.) can coconut

Directions

    Cream sugar and shortening; add beaten eggs and coconut extract. Add dry ingredients and buttermilk alternately. Add coconut last. Bake in greased and floured pan at 350° for an hour.
