- 1 1/2 c. granulated sugar
- 2 c. milk
- 3 egg yolks
- 3 level Tbsp. all-purpose flour
- 1 tsp. vanilla
- 2 Tbsp. butter
- 1 (12 oz.) box vanilla wafers, divided
- 2 c. coconut, divided
- 3 egg whites
- 1/2 c. granulated sugar
Directions

1To make the pudding:

2In a medium, heavy saucepan, combine 1 1/2 cups sugar, milk, egg yolks and flour.

3Whisk together until smooth.

4Place over medium heat and cook, stirring constantly, until thickened, about 6 to 8 minutes.

5Add vanilla and butter and stir well.

6Line a 1 1/2-quart baking dish with half the vanilla wafers; top with half the coconut.

7Pour half the custard on top of that.

8Repeat all three layers.
