Coconut Refrigerator Roll

  • 3/4 c. heavy cream
  • 1 tsp. vanilla
  • 1/2 c. finely cut or sliced marshmallows
  • 2 c. crushed graham cracker crumbs
  • 1 c. flake coconut
  • 1/2 c. chopped walnuts
  • 3 Tbsp. chopped maraschino cherries
  • 1/2 c. flake coconut
  • 1/3 c. chopped walnuts
  • 1/2 c. whipping cream

    Combine first 7 ingredients in mixing bowl and work with hands into a firm ball.

    Shape into a roll 6 inches long.

    On a sheet of wax paper, mix coconut and chopped walnuts.

    Coat roll by rolling and pressing into coconut-walnut mixture.

    Wrap in wax paper and refrigerate for 12 hours.

    Makes 12 (1/2-inch) slices.
