- 1 tablespoon olive oil
- 1 cup uncooked rice
- 1 12 teaspoons turmeric
- 12 teaspoon salt
- 14 teaspoon black pepper
- 1 12 cups vegetable stock
- 12 cup coconut milk
- 12 cup almonds
Directions

1Heat olive oil in medium saucepan over medium-high heat.

2Add uncooked rice, tumeric, salt, and pepper.

3Stir rice occasionally until it is toasted and starts to smell nutty (3-4 minutes).

4Add vegetable stock and coconut milk and stir well.

5Bring to boil and then turn the heat down to maintain a simmer.

6Cover and simmer for 15 minutes.

7Remove rice from heat and stir in almonds.

8Serve immediately.
