- 1 1/4 cup rice
- 1 1/2 cup water
- 1 cup unsweetened coconut milk
- 1/4 to 1/2 teaspoon salt (I use kosher style flake salt)
Directions

1Rinse the rice in cold water and drain well.

2Place in a saucepan with the water, coconut milk and salt.

3Place over high heat and bring to a boil.

4Stir, reduce the heat to low and cover the pot.

5Cook for 15 minutes.

6Remove from heat and let stand for 5 to 10 minutes.

7Fluff with a fork before serving.
