Coconut rice

  • 1 1/4 cup rice
  • 1 1/2 cup water
  • 1 cup unsweetened coconut milk
  • 1/4 to 1/2 teaspoon salt (I use kosher style flake salt)

Directions

    Rinse the rice in cold water and drain well.

    Place in a saucepan with the water, coconut milk and salt.

    Place over high heat and bring to a boil.

    Stir, reduce the heat to low and cover the pot.

    Cook for 15 minutes.

    Remove from heat and let stand for 5 to 10 minutes.

    Fluff with a fork before serving.
