Coconut Rice

  • 1 (14 ounce) can unsweetened coconut milk
  • water
  • 1 cup basmati rice
  • 1 pinch salt

Directions

    Stir together coconut milk and 1 can of water.

    Add rice and salt.

    Bring mixture to a boil; lower heat and simmer, covered, for 45 minutes without stirring.

    When finished, fluff rice with a spoon.

    Note that other types of rice will have different requirements for liquid amounts and cooking time - this is for Basmati or other longer grained rice.

    If you want something a little fancier, this is great with almond slivers.

    Peas and carrots are also a nice addition.
