- 1 (14 ounce) can unsweetened coconut milk
- water
- 1 cup basmati rice
- 1 pinch salt
Directions

1Stir together coconut milk and 1 can of water.

2Add rice and salt.

3Bring mixture to a boil; lower heat and simmer, covered, for 45 minutes without stirring.

4When finished, fluff rice with a spoon.

5Note that other types of rice will have different requirements for liquid amounts and cooking time - this is for Basmati or other longer grained rice.

6If you want something a little fancier, this is great with almond slivers.

7Peas and carrots are also a nice addition.
