- 1 cup flour
- 4 teaspoons baking powder
- 1 tablespoon cocoa
- 1 cup coconut
- 1/2 cup sugar
- 60 g butter, melted
- 1 egg
- 1 cup milk
- 1/2 teaspoon coconut extract
- Coconut Rough Topping
- 3/4 cup icing sugar
- 1/2 cup coconut
- 1 teaspoon cocoa
- 1 tablespoon butter
- vanilla essence
- 2 teaspoons hot water
Directions

1Preheat oven to 200°C Lightly grease 12 muffin tins.

2Sift together flour, baking powder and cocoa into a bowl.

3Stir in the coconut and sugar and make a well in the centre.

4In another bowl, lightly whisk together the melted butter, egg, milk and coconut essence.

5Fold egg mixture into dry ingredients and stir quickly to combine.

6Spoon mixture into prepare muffin tins and bake for 12 - 15 minutes or until muffins spring back when lightly pressed.
