  • 2 (8 ounce) packages frozen spinach, defrosted and pressed as dry as possible
  • 12 cup coconut milk
  • vegetable oil
  • salt and pepper
  • 14 cup chopped scallion
  • 14 cup shredded coconut

Directions

    Place spinach in a pot or microwave safe dish with coconut milk and heat until warm in the microwave or on the stove top.

    Stir in oil, salt and pepper to taste.

    Sprinkle the scallions and shredded coconut on top as a garnish.
