Ingredients
- 1 1/4 c. flour
- 1/4 c. sugar
- 1/2 c. butter
- 1 c. well drained crushed pineapple
- 1 Tbsp. soft butter
- 1/2 c. sugar
- 1 egg, beaten
- 1 1/2 c. flaked coconut
Directions

1Stir flour and 1/4 cup sugar together, then cut in 1/2 cup butter with a pastry blender (or fork).

2Press firmly into an 8 x 8-inch pan.

3Bake at 350° for 15 minutes.

4Remove from oven and top with pineapple.

5Combine 1 tablespoon soft butter, 1/2 cup sugar and egg.

6Mix well and add the coconut.

7Blend well and spread over the pineapple.

8Return to oven and bake for 25 to 30 minutes at 350°.

9Cool and cut into squares.
