- 2 teaspoons creme fraiche

- 2 pinches chives, chopped

1Heat the oven to 375F degrees F/190 degrees C.

2Into the bottom of each of two buttered ramekins put a spoonful of blue cheese

3Gently crack an egg in on top.

4Top with a spoonful of creme fraiche.

5Season with salt and pepper.

6Sprinkle over the chives.

7Set the ramekins in a baking dish and pour hot water in the dish to come half-way up the sides of the ramekins.

8Bake until cooked, but still jiggling, 5 to 7 minutes.

9Serve with buttered toast fingers for dipping.
