- 1 lb. frozen cod fillets
- 1/3 c. olive or vegetable oil
- 1/4 c. dry white wine or water
- 1/2 c. chopped, fresh parsley
- 3 Tbsp. lemon juice
- 1 clove garlic, minced or pressed
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1 medium tomato, diced
- 1/2 c. soft bread crumbs
Directions

1Brush 1 tablespoon of oil in the bottom of a shallow baking dish large enough to accommodate the fish in one layer with space in between.

2Mix remaining oil with wine, parsley, lemon juice, garlic, salt and pepper.

3Sprinkle diced tomato over fish and pour on the oil-wine mixture.

4Sprinkle with bread crumbs.

5Bake at 350° for about 40 minutes or until fish flakes when probed with a fork.
